🧑‍🍳 Reopening on Sunday

I've been obsessing over this recipe developer's newsletter lately. She does these incredible experiments where she tests different versions of the same recipe.

Look at this baking experiment where she tests six different ratios, from 50% to 100%, each with its own unique hydration and fat content — every variation creates distinctly different layers and textures in the puff pastry.

It's fascinating how changing the ratios, even slightly, leads to such different results. There isn't a 'wrong' version here. Some might prefer the delicate layers of the 85% ratio, while others might swear by the structure of the 75% version. It all depends on what you're trying to achieve.

That got me thinking about business strategies. When you're running a solo operation, you need to be selective about which approaches you invest in because your time and resources are limited. You can't test every possible ratio and method yourself so you'd want to learn from others' experiences to find what's most likely to work for you.

And yet, here I am, sharing just one operator's proven recipe with you. That's like saying there's only one perfect ratio for a puff pastry — any baker would know better.
